ECA Training On-Premises Coverage

The Egyptian Chefs Association (ECA) recently conducted an exclusive on-premises training for the chefs and service team at Cheiron International Corporation, a leading oil and gas company in Egypt. The training was held in two separate groups throughout February, with each group participating in a five-day program.

This initiative was part of Cheiron’s Ramadan Campaign, focusing on occupational health and hygiene, particularly for its catering teams across various locations, including the Western Desert and the Gulf of Suez. The training, designed to enhance culinary and safety standards, covered two essential topics: Food Safety for Catering (a theoretical session) and Knife Handling & Cutting Skills (a practical workshop).

The Food Safety for Catering session provided essential knowledge on maintaining hygiene and preventing foodborne illnesses in professional kitchen settings. Participants learned about critical topics such as proper food storage, temperature control, personal hygiene, and cross-contamination prevention, ensuring that the highest safety standards are upheld in their daily operations.

Led by Chef Hussein Mokhtar, an expert ECA trainer, the workshop aimed to equip participants with fundamental knowledge and practical skills essential for maintaining high standards in professional kitchens.

The Knife Handling & Cutting Skills session provided hands-on training, emphasizing the importance of precision in food preparation. Chef Hussein guided participants through key aspects such as:

  • Different types of knives and their uses
  • Proper knife handling techniques
  • Mastering vegetable classical cuts, including julienne and brunoise

Under Chef Hussein’s expert supervision, participants mastered their knife skills, enhancing both their efficiency and confidence in the kitchen.
